Ceylon cinnamon is indigenous to Sri Lanka. With its first use dating back 3000 years, Ceylon cinnamon, amongst other spices and precious stones, was what lured the Portuguese and Dutch to Sri Lanka. Having fought many battles over its cinnamon, Sri Lanka currently produces over 90% of the world’s true cinnamon.
The preparation of Ceylon cinnamon combines art and skill with handcrafted techniques mastered and perfected over many centuries handed down from generation to generation.
